The "pitted oil" is a product of very high quality in which the pulp of the olives is mechanically separated from the pit before pressing.
Being devoid of tannic substances of the pit, we obtain from it an olive oil with delicate and balanced nuances.
Many beneficial effects also for health: more phenolic antioxidants and less polyunsaturated acids, more resistance to oxidation and less peroxides. In this way The Pulps, once squeezed, become a precious ingredient for your dishes.
